
Ok…I know you’re probably thinking, what the heck is farmer cheese? Well, it is essentially a pressed cottage cheese which has had its excess moisture removed . It has a similar consistency to ricotta with a creamy, slightly tangy flavor. As a kid, I used to eat it mixed with a little sour cream and sugar. It was one of my favorite treats!
So when The Recipe Redux challenged us to stir up some of our earliest culinary recollections, my mind went back to being probably close to 7 or 8 years old, and mixing this together with my mom in the kitchen.
It’s not the most intense cooking lesson, but to be fair, I was barely able to see the kitchen counter.
It was one of my first times taking some ingredients and combining it into something delicious! I am so excited to share my version using Greek yogurt in place of sour cream too boost the protein and added some berries!

Farmer Cheese Yogurt Parfait with a Frozen Berry Compote
Ingredients
- 1 cup plain Greek yogurt
- 1/2 cup farmers cheese can use ricotta or cottage cheese, if can't find farmers cheese
- 1 & 1/2 tsp honey
- 1 cup frozen berries mixed
- 2 tsp sugar
Instructions
- Start with the berry compote: on medium-low heat, add frozen berries and sugar in a small saucepan. As the berries heat up, they will begin to release juice. Mix and smash the berries into a smooth consistency. Optional: strain to remove the seeds (I left the seeds in)
- In a small bowl, combine yogurt, farmer's cheese and honey. Divide into half and serve each with about half of the compote. Garnish with extra berries!

Creamy, delicious and really easy to make.As soon as I took my first bite, my mind instantly went back to my childhood. It’s a sweet treat that can be enjoyed with breakfast or a snack.
You can garnish it with fresh berries, a small drizzle of honey. It would also be good with a little peanut butter for a play on PB+J. However you do it, make it how you love it!
