I have been obsessed with chicken salad lately and I am almost always obsessed with caesar salads, so, I combined the two for an avocado caesar chicken salad…and it was perfect!

This would be good on a sandwich, on top of a salad, or in a wrap!

Chicken can get boring sometimes, especially if it is leftover from the night before, so this is a perfect use of leftovers that you can transform to something totally new the next day.

Let’s get to it!

 

Avocado Caesar Chicken Salad

Servings: 2

Ingredients

Chicken Salad

  • 6 oz chicken breast cooked
  • 1 stalk celery finely chopped
  • 1/2 red bell pepper finely chopped
  • 1 small bunch fresh cilantro or parsley finely chopped
  • salt and pepper to taste

Avocado Dressing

  • 1 avocado
  • 2 dashes Worcestershire
  • 1/2 tbsp fresh lime juice about half a lime
  • 1/4 tsp garlic powder
  • 1/2 tbsp parmesan cheese
  • salt and pepper to taste

Instructions

  • Chop cooked chicken into chunks. Add celery, bell pepper, cilantro or parsley.
  • Combine ingredients for dressing and add to chicken mixture, until fully incorporated.
  • Add to 2 slices bread, 1 wrap or on top of a fresh salad!

The bell pepper and celery give it that perfect crunch, with the tangy yet creamy dressing to complete it!

A good go to meal for any day or occasion.

You can also add any veggies you like, such as onion, carrots, etc.
